- 1 cup cauliflower florets
- 1/4 onion diced
- 1 clove garlic minced
- 1/4 cup vegetable broth
- 1/2 cup milk
- 1/4 teaspoon salt
- Freshly ground black pepper to taste
Preheat oven to 375 degrees F.
In a small bowl, combine cauliflower florets, onion, garlic, and vegetable broth.
Transfer mixture to a baking dish and roast for 25 minutes, or until the cauliflower is tender.
Let cool slightly then transfer to a blender or food processor and blend until smooth.
Add milk and salt and blend again until combined.
Season with black pepper to taste.
Serve warm or chilled.
