Cauliflower Rice Risotto
Cauliflower rice is a dish made from cauliflower that has been grated or chopped into small pieces, making it resemble the appearance of rice. It can be used as a replacement for rice in many dishes, such as risotto.

- -1 head of cauliflower riced
- -1 tbsp. olive oil
- - an onion diced
- -3 cloves of garlic minced
- -1 cup vegetable broth
- -1/2 cup white wine
- -1/4 cup Parmesan cheese shredded
- -Salt and pepper to taste
Now that you have all of your ingredients gathered, it's time to get cooking! The first step is to heat the olive oil in a large skillet over medium heat. Once heated, add in the onion and garlic and cook until both are softened. Next, add in the riced cauliflower and cook for 3-5 minutes until slightly softened.
Now it's time to start adding in the liquids. Pour in the vegetable broth and white wine, and bring the mixture to a boil. Reduce the heat and let simmer until most of the liquid has been absorbed, stirring occasionally. This should take 10-15 minutes.
Once most of the liquid has been absorbed, stir in the Parmesan cheese until well combined. Season with salt and pepper to taste. Serve immediately and enjoy!
