- 1 cup cooked and cooled quinoa
- 1 large carrot diced
- 1 red bell pepper diced
- 1/2 cup cooked edamame
- 2 green onions thinly sliced
- 1/4 cup chopped fresh cilantro
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons freshly squeezed lime juice
- 1 tablespoon honey
- Sea salt and freshly ground black pepper to taste
This quinoa salad is a great way to get your daily dose of veggies, and it's easy to make, too! Here's a step-by-step guide to making the salad:
Rinse the quinoa in a fine mesh strainer and rinse under cold water.
In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa and reduce the heat to low. Simmer for about 15 minutes, or until the quinoa is cooked through.
Meanwhile, prep the vegetables for the salad. Chop the cucumber, tomatoes, and red onion into bite-sized pieces.
Once the quinoa is cooked, add it to a large bowl along with the chopped veggies.
For the dressing, whisk together olive oil, lemon juice, garlic, salt, and pepper. Pour over the salad and mix everything together until coated.
Serve immediately or store in the fridge for later. Enjoy!
