Mediterranean Quinoa Salad

Ingredients
  

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can chickpeas drained and rinsed
  • 1/2 red onion diced
  • 1/2 red bell pepper diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 3 tablespoons freshly squeezed lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Rinse the quinoa in a fine mesh strainer and rinse under cold water for about 2 minutes.
  • In a medium saucepan, bring 2 cups of water to a boil and stir in 1 cup of quinoa.
  • Bring to a low simmer and put a lid on the saucepan.
  • Cook for 12-14 minutes, or until fully cooked through. Remove from heat and fluff with a fork.
  • Let cool slightly before adding to the salad.
  • To make the dressing, whisk together all of the ingredients in a small bowl or jar and set aside.
  • To assemble the salad, add the cooled quinoa to a large bowl along with the tomatoes, cucumber, red onion, olives, parsley, and mint leaves.
  • Pour the dressing over top and toss everything together until coated evenly
