Ingredients
  

  • -1 can chickpeas drained and rinsed
  • -1/2 red onion
  • -1 green bell pepper
  • -1/4 cup salsa
  • -1 tsp. chili powder
  • -1/4 tsp. ground cumin
  • -1/4 tsp. garlic powder
  • -Salt and pepper to taste
  • Simply stir everything together in a large skillet over medium heat until the vegetables are soft and the chickpeas are heated through. Serve on a bed of rice or quinoa topped with additional salsa and any other desired toppings (avocado, sour cream, etc.). Enjoy!

Instructions
 

  • In a large skillet, heat olive oil over medium heat. Add the onion and garlic and cook until softened, stirring occasionally.
  • Add the chickpeas and spices and cook for 5 minutes, stirring occasionally.
  • Add the kale and cook for 3-5 minutes until wilted.
  • Serve in bowls and top with desired toppings.
