Ingredients
  

  • 1 lb. of mushrooms
  • 1 onion
  • 3 cloves of garlic
  • 2 carrots
  • 2 celery sticks
  • 2 tbsp. of olive oil
  • 6 cups of vegetable broth
  • 1 cup of pearl barley
  • 1 tbsp. of fresh thyme leaves or 1 tsp. of dried thyme
  • Salt and pepper to taste

Instructions
 

  • Rinse the barley in a fine mesh strainer and set aside.
  • Slice the mushrooms thinly.
  • In a large pot, sauté the mushrooms in olive oil over medium heat until they are softened and browned.
  • Add the garlic and sauté for an additional minute.
  • Stir in the barley broth. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.
  • Season the soup with salt and pepper to taste before serving hot.
