Mushroom Barley Soup Recipe

- 1 lb. of mushrooms
- 1 onion
- 3 cloves of garlic
- 2 carrots
- 2 celery sticks
- 2 tbsp. of olive oil
- 6 cups of vegetable broth
- 1 cup of pearl barley
- 1 tbsp. of fresh thyme leaves or 1 tsp. of dried thyme
- Salt and pepper to taste
Rinse the barley in a fine mesh strainer and set aside.
Slice the mushrooms thinly.
In a large pot, sauté the mushrooms in olive oil over medium heat until they are softened and browned.
Add the garlic and sauté for an additional minute.
Stir in the barley broth. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.
Season the soup with salt and pepper to taste before serving hot.
