Spiced Carrot and Chickpea Salad
This salad is a flavorful and filling way to enjoy carrots and chickpeas. The spices add an extra depth of flavor, while the feta cheese provides a nice contrast in texture. The salad can be served as a main course or as a side dish.

- -1 can of chickpeas drained and rinsed
- -1 large carrot peeled and grated
- -1/4 cup finely chopped red onion
- -2 tablespoons chopped fresh parsley
- -1 tablespoon olive oil
- - tablespoon lemon juice
- -1 teaspoon ground cumin
- -1/4 teaspoon salt
- -1/4 teaspoon black pepper
Start by cooking the chickpeas. If you're using canned chickpeas, simply drain and rinse them. If you're using dried chickpeas, soak them overnight in water, then drain and rinse them.
Next, peel and chop the carrots into bite-sized pieces.
To make the dressing, combine all of the ingredients in a small bowl or jar and whisk (or shake) until combined.
In a large bowl, combine the cooked chickpeas, chopped carrots, and desired amount of dressing. Toss to coat.
Serve immediately or store in the fridge for later. Enjoy!
