Spiced Carrot and Chickpea Salad

This salad is a flavorful and filling way to enjoy carrots and chickpeas. The spices add an extra depth of flavor, while the feta cheese provides a nice contrast in texture. The salad can be served as a main course or as a side dish.

Ingredients
  

  • -1 can of chickpeas drained and rinsed
  • -1 large carrot peeled and grated
  • -1/4 cup finely chopped red onion
  • -2 tablespoons chopped fresh parsley
  • -1 tablespoon olive oil
  • - tablespoon lemon juice
  • -1 teaspoon ground cumin
  • -1/4 teaspoon salt
  • -1/4 teaspoon black pepper

Instructions
 

  • Start by cooking the chickpeas. If you're using canned chickpeas, simply drain and rinse them. If you're using dried chickpeas, soak them overnight in water, then drain and rinse them.
  • Next, peel and chop the carrots into bite-sized pieces.
  • To make the dressing, combine all of the ingredients in a small bowl or jar and whisk (or shake) until combined.
  • In a large bowl, combine the cooked chickpeas, chopped carrots, and desired amount of dressing. Toss to coat.
  • Serve immediately or store in the fridge for later. Enjoy!
