Cabbage Soup with Rice

- -1 tablespoon olive oil
- -1 onion diced
- -3 cloves garlic minced
- -1 head of cabbage chopped
- -6 cups vegetable broth
- -1 cup cooked rice
- -Salt and pepper to taste

- -Chopped carrots
- -Chopped celery
- -Diced tomatoes
Rinse the rice in a fine mesh strainer and rinse under cold water until the water runs clear.
In a medium saucepan, bring 2 cups of water to a boil and stir in 1 cup of rice.
Bring to a low simmer and put a lid on the saucepan.
Cook for 18 minutes, or until fully cooked. Remove from heat and let sit before fluffing rice with a fork.
Meanwhile, chop the cabbage into bite-sized pieces.
In a large pot or Dutch oven, heat olive oil over medium heat until hot and add in chopped cabbage.

Add in garlic and cook for 1 minute until fragrant.
Stir in cooked rice, soy sauce, and sesame oil and mix until evenly combined.
