Paella with Artichokes and Smoked Tofu

Paella is a dish that originates from Spain and consists of rice, vegetables, and meat or seafood. It is typically cooked in a large, shallow pan over an open fire. Paella with artichokes and smoked tofu is a vegan version of this dish that is just as flavorful and satisfying as the original.

Ingredients
  

  • 1/4 cup olive oil
  • 1 white onion diced
  • 4 cloves garlic minced
  • 2 cups uncooked white rice
  • 4 cups vegetable broth
  • 1 15-ounce can diced tomatoes, undrained
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 14-ounce can artichoke hearts, drained and quartered
  • 8 ounces smoked tofu cut into 1-inch cubes

Instructions
 

  • Rinse the rice in a fine mesh strainer and set aside.
  • In a large paella pan or skillet, heat 1 tablespoon of olive oil over medium heat. Add the garlic and onion and cook until softened, about 5 minutes.
  • Stir in the smoked tofu and cook for 2 minutes more.
  • Add the rinsed rice and stir to coat with the oil.
  • Pour in the vegetable broth and bring to a boil.
  • Add the artichokes and peas, then reduce the heat to low and simmer for 20 minutes, stirring occasionally.
  • Taste the paella and add salt and pepper as needed. Serve hot, garnished with lemon wedges if desired
