Paella with Artichokes and Smoked Tofu

- 1/4 cup olive oil
- 1 white onion diced
- 4 cloves garlic minced
- 2 cups uncooked white rice
- 4 cups vegetable broth
- 1 15-ounce can diced tomatoes, undrained
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 14-ounce can artichoke hearts, drained and quartered
- 8 ounces smoked tofu cut into 1-inch cubes
Rinse the rice in a fine mesh strainer and set aside.
In a large paella pan or skillet, heat 1 tablespoon of olive oil over medium heat. Add the garlic and onion and cook until softened, about 5 minutes.
Stir in the smoked tofu and cook for 2 minutes more.
Add the rinsed rice and stir to coat with the oil.
Pour in the vegetable broth and bring to a boil.
Add the artichokes and peas, then reduce the heat to low and simmer for 20 minutes, stirring occasionally.
Taste the paella and add salt and pepper as needed. Serve hot, garnished with lemon wedges if desired
