Ingredients
  

  • -1 14-ounce block extra-firm tofu, drained
  • -1/4 cup soy sauce
  • -2 tablespoons honey
  • -1 tablespoon rice vinegar
  • -1 tablespoon vegetable oil
  • -3 cloves garlic minced
  • -1 teaspoon grated fresh ginger
  • -1/4 teaspoon ground black pepper
  • -1/2 red bell pepper diced
  • -1/2 green bell pepper diced
  • -1/4 cup chopped fresh pineapple

Instructions
 

  • Preheat oven to 375 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
  • Cut the tofu into about 1 inch cubes and add to a bowl. Sprinkle with salt and pepper then drizzle with olive oil. Toss to coat then spread the cubes out on the prepared baking sheet. Roast for 25 minutes, flipping once about halfway through.
  • While the tofu is roasting, prepare the stir fry sauce by whisking together the reserved pineapple juice, soy sauce, honey, and cornstarch in a small bowl. Set aside.
  • When the tofu is done cooking, heat up a large skillet over medium high heat then add in more olive oil. Add in the garlic and onion, cooking until both are translucent.
  • Add in the bell pepper and pineapple chunks then cook for 3 more minutes until everything is heated through.
