Super Food Detox Salad Recipe

Ingredients
  

  • 1 head of romaine lettuce chopped
  • 1/2 head of cabbage chopped
  • 1 carrot shredded
  • 1/2 red onion diced
  • 1 apple diced
  • 1/4 cup raisins
  • 1/4 cup sunflower seeds
  • For the dressing:
  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • 1 tablespoon honey or agave nectar optional

Instructions
 

  • Rinse and soak the quinoa in a bowl of water for about 15 minutes.
  • Drain and rinse the quinoa, then add it to a pot with 1 cup of water.
  • Bring the pot of quinoa to a boil, then reduce the heat to low and simmer for about 15 minutes or until the water is absorbed.
  • Remove the quinoa from the heat and let it cool.
  • In a large bowl, combine the cooled quinoa, kale, cranberries, almond slivers, and green onions.
  • In a small bowl or jar, whisk together the apple cider vinegar, olive oil, lemon juice, Dijon mustard, honey, and salt & pepper to taste.
  • Pour the dressing over the salad and toss everything together until coated.
  • Serve immediately or store in an airtight container in the fridge for up to 3 days.
