Prepping the Soup:
-Start by prepping the black beans. If you're using dried beans, soak them overnight in water. If you're using canned beans, drain and rinse them.
-Chop up the vegetables that you'll be using in the soup. This includes the onion, celery, carrots, and garlic.
-Now it's time to start cooking!
Cooking the Soup:
-In a large pot or Dutch oven, heat up some olive oil over medium heat.
-Once the oil is hot, add in the chopped veggies and let them cook until they're softened - this should take about 10 minutes.
-Stir in the black beans, broth, diced tomatoes (with their juices), chipotle peppers, and adobo sauce. Bring everything to a boil.
-Once it's boiling, reduce the heat to low and let the soup simmer for 30 minutes.
-After 30 minutes, taste the soup and see if you want to add more seasoning. If so, add salt and pepper to taste.
-Now it's time to serve! Ladle the soup into bowls and enjoy
