Lentil Vegetable Soup

- The soup requires very few ingredients which include:
- -1 onion
- -1 garlic clove
- -2 carrots
- -2 celery stalks
- -1/2 teaspoon of dried thyme
- -1 bay leaf
- -1/4 teaspoon of black pepper
- -8 cups of vegetable broth or water
- -1 cup of green lentils rinsed and sorted
- -3 cups of chopped fresh vegetables such as potatoes, turnip, zucchini, spinach, kale, or Swiss chard
- -1/4 cup of fresh parsley leaves
In a large pot, sauté onion in olive oil over medium heat until softened. Add garlic, carrots, celery, and thyme and continue to cook for 5 minutes. Stir in lentils, diced tomatoes, and water. Bring to a boil, reduce heat to low, and simmer for 30 minutes. Stir in spinach leaves and cook for an additional 5 minutes. Serve hot with crusty bread.
